Spanish food recipes - Huevos a la Cordobesa (Eggs in Córdoba style)

You will need
4 large potatoes
oil
1 small sliced onion
2 sweet red peppers, deseeded and finely sliced
small chili pepper (or splash of tabasco)
6 eggs
150g chorizo

Peel the potatoes and slice them thinly, then fry them in the oil adding the onion to soften. Remove to a serving plate and keep warm. Now fry the strips of pepper (and chili if using) until soft and add to the potatoes. Fry the eggs and put on the plate with the potatos and peppers and finally fry the sliced choizo add to the platter and serve immediately.
