Spanish food recipes - Huevos en salsa de almendras (eggs in almond sauce)

You will need
8 hard boiled eggs, quartered
20 blanched almonds
2 cloves garlic
2 slices of bread
1 tablespoon dry sherry 10 peppercorns
saffron
big pinch cinnamon
1 clove
300ml water or stock
parsley

In a pan heat some oil and fry the almonds,garlic and bread until the bread is crisp and the almonds golden. Put this into a blender and add the sherry, peppercorns, saffron, cinnamon, clove and (if using) a pinch of salt. Blend to a paste with a little of the water or stock and return it to the pan with the remaining liquid. Simmer for 5 minutes then add the hard boiled eggs and let them heat through. Sprinkle with chopped parsley and serve with toast, bread or rice.
