Spanish food recipes - Tortilla Espinacas (spinach omlette)

You will need
6 tablespoons cooked spinach
half a small onion finely chopped
2 beaten eggs
grated cheese

Squeeze the spinach to remove as much liquid as possible them chop it finely and mix with the onion and the beaten eggs plus salt (if using) and pepper. Heat a little oil in a frying pan and pour in the mixture. Allow it to cook slowly so that the omlette sets without browning too quickly. The either turn the omlette over (as in Tortilla Espñola) or place under a medium grill to brown the top. Serve srinkled with the grated cheese and maybe some fresh tomato sauce.
