food recipes - Pescado con Fideos (Fish with pasta)
You will need
500g any fish in fillets, slices, cubed or strips
1 small onion chopped
2 gren peppers chopped
garlic chopped
2 large tomatoes skinned, deseeded and chopped
100g peas
1.5 litres fish stock
200g uncooked peeled prawns
250g clams well cleaned
500g fideos or spaghetti
ground cumin
saffron
paprika
Sauté the onion, garlic, peppers and tomatoes,
in a little oil, and leave to cook for 10 minutes until reduced.
Meanwhile, in a separate pan, brown the fish, remove and keep warm.
Add the peas and the stock to the tomato mixture and bring to the
boil. Stir in the cumin, paprika, saffron and the pasta. Now add
the clams, prawns and fried fish. Lower the heat and simmer for
6 -8 minutes until the pasta is tender. Remove from the heat, cover
and leave to rest for 5 minutes. Serves 6.

Tostados
This is wonderful at any time of day, we have it
for breakfast at about 10, or as a snack or starter.
You will need:
- A day old barra (french stick)
- A peeled clove of garlic
- Extra virgin olive oil
- Fresh tomato
Slice the barra lengthwise and toast until golden,
then rub the toasted side with the garlic clove
all over. Take the tomato and slice in half and
rub vigourously over the toast. Drizzle lots and
lots of olive oil onto the toast let it soak in
and enjoy! Some people like to sprinkle a little
salt on too.
