Spanish pasta and bread recipes - Andrajos ('Ragged' casserole)

Spanish food recipes - Andrajos ('Ragged' casserole)

You will need
1 onion chopped
garlic chopped
2 tomatoes skinned deseeded and chopped
paprika
saffron
10 peppercorns ground
1 clove ground
pinch cumin ground
500ml stock
400 - 800g meat or fish (chicken, rabbit, bacalao etc) cut into bite sized pieces
100g cooked pasta squares (cannelloni or lasage sheets are ideal)
parsley

Heat the oil in a pan and sauté the onion and garlic. Add the tomatoes and the stock along with the ground spices and a good pinch of paprika. Bring to the boil and add the meat or fish then lower to simmer and leave for 10 minutes to cook. Add the pasta squares and continue cooking for a further 10 minutes until the meat is tender. Stir in a little parsley and serve.
