food recipes - Fideos la Catalán (Catalan style pasta)
You will need
250g pork spare ribs cut into short lengths
100g chorizo picante (or a good spicy sausage)
100g butifarra (white sausage)
1 chopped onion
3 tomatoes skinned deseeded and chopped
1.5 litre meat stock
500g fideos or pasta
40g almonds, hazelnuts or pine nuts
garlic
1 slice toasted bread
saffron
paprika
parsley
cinnamon
100g grated cheese

Heat a little oil in a pan and brown the ribs. Then add the chopped
onion and fry gently until soft. Add the tomatoes and a good pinch
of paprika and stir. Add the spicy sausage cut into pieces and the
sliced butifarra. Pour over the stock and add the pasta. Bring to
the boil then lower the heat to simmer for 10 minutes. Meanwhile
blend the nuts, garlic, bread, parsley, cinnamon and saffron with
a little stock to make a paste. Stir this into the casserole and
continue to cook for another 10 minutes until the meat is tender.
Sprinkle on the grated cheese and serve. Serves 4.

Tostados
This is wonderful at any time of day, we have it
for breakfast at about 10, or as a snack or starter.
You will need:
- A day old barra (french stick)
- A peeled clove of garlic
- Extra virgin olive oil
- Fresh tomato
Slice the barra lengthwise and toast until golden,
then rub the toasted side with the garlic clove
all over. Take the tomato and slice in half and
rub vigourously over the toast. Drizzle lots and
lots of olive oil onto the toast let it soak in
and enjoy! Some people like to sprinkle a little
salt on too.
