Spanish food recipes - Salpicon de Mariscos (Seafood salad)

You will need
500g mussels well cleaned and steamed open
250g cooked prawns shelled
6 tomatoes chopped
1 small red onion finely chopped
1 green pepper chopped
1/2 cucumber peeled and chopped
2 hard boiled eggs
garlic minced
6 tablespoons extra virgin olive oil
5 tablespoon wine vinegar
parsley chopped

After steaming the mussels, disgard any that have not opened and remove the meat. In a large bowl mix the tomatoes, onion, green pepper, cucumber, parsley and chopped eggs whites. To make the dressing, mash the egg yolks with the garlic then whisk into the olive oil and vinegar. Add the cooked seafood to the tomato mixture and pour over the dressing to coat everything. Makes 12 tapa servings
